Overview of the Wine
The Montagne de Reims boasts some of the best Pinot Noir in the region—Bouzy is the capital. The key to its inherent greatness lies in its deep, chalky subsoil which imparts intense expression of fruit and great mineral complexity in its grand cru wines. The village of Bouzy and Champagne Paul Bara are practically synonymous. As the published village historian, Paul is indelibly linked to the lore of his hometown. Many call him their most renowned producer, one of the rare récoltants-manipulants in a region inundated with mass-produced wine. These R.M.s, as they are known, are of the few who still grow their own grapes and make their own wines. Champagne Paul Bara is the quintessential example, everything done with personal touch.
Grape / Blend
68% Pinot Noir, 20% Chardonnay, 12% Red wine
Soft, pink colored champagne with abundant, fine bubbles. Aromas of red fruits dominated by wild strawberry and cherry, and the typical peppery note of Pinot Noir. The palate mirrors the nose with strawberry and raspberry flavours, leading into notes of freshly baked viennoisseries and a morello cherry finish.
Ideal pairings include red meats, roast beef with foie gras, tarte tatin.

The addition of still pinot noir from Bouzy (12 percent) gives this wine a vinous character, deepening its raspberry freshness without diminishing the gingery feel of the mousse. It’s a clean wine with structure and stamina, a lovely match for duck confit.

Mouthwatering and harmonious, this is lightly chalky in texture, with a zesty layer of pink grapefruit peel, ground ginger and spicy mineral underscoring the white peach and blanched almond flavors. Offers a plush, lingering finish.

The NV Brut Grand Rosé is fabulous. Bright and punchy, the Rosé fleshes out beautifully in the mid-palate and into the finish as the Pinot gains volume. The Grand Rosé has enough charm to drink well as an aperitif, but there is serious depth here too. Cranberry, orange peel, dried rose petal and a hint of cinnamon develop over time. The Grand Rosé is simply impeccable from start to finish. More importantly, it is absolutely delicious. Drinking window: 2020 - 2028

The NV Brut Grand Rose is an absolutely delicious wine, particularly at the NV level. This is a serious rose, which is immediately evident in the wine’s dark hue and dense, full-bodied personality. Their wine possesses layers of candied Pinot fruit, all woven together in a rich, sensual style. This sweeping, large-scaled rose will offer its finest drinking at the dinner table.
