Domaine de Vaccelli is a leading producer of modern Corsican wines, with a focus on typical Corsican grape varieties that form the pillars of the Ajaccio appellation and terroir. The vineyard is committed to manual harvesting and organic farming, and was certified as organic in 2019. The vineyard’s 25 hectares of vines are planted on hillsides with granite arenas, producing exceptional wines like the Chioso Novo cuvée and Aja Donica, crafted from a parcel selection of Vermentino grapes. With a nose of honey and white flowers, great aromatic persistence, and a perfect balance, this wine also boasts flavors of nectar, candied lemons, and sweet spices, thanks to its blend of Vermentino and Bianco Gentile grapes.

Winemaker's Tasting Notes
Through its pretty, golden hue, this cuvée exudes notes of white flower and citrus. It is unctuous on the palate whilst retaining its dry style. The overall impression is one of density, strong fruit, and a fine persistence. This wine is made to be enjoyed in its youth. We recommend decanting it before serving with a dish like spinach and ricotta cannelloni or goats’ cheese and honey.
