Overview of the Wine
Domaine Vincent Dauvissat is arguably the finest Domaine in Chablis. Established in the 1970s by Robert Dauvissat, the Domaine has passed down from father to son for three generations. Robert’s son René is to thank for establishing the reputation of the Domaine. Vincent began working with his father, René, in the 1970s and today runs the Domaine. A loyal following among France’s most esteemed restaurateurs sharply limits the availability of Dauvissat wines for export. Despite limited quantities, the wines have attracted the praise and attention of critics worldwide.

Vinification at the domaine is painstaking and traditional at a time when many growers in Chablis have adopted methods permitting increased yields producing simple wines that reach maturity quickly. Vincent Dauvissat, on the other hand, gives all his wines at least a year in Nevers oak, a portion of which is new each vintage. This practice, imposed on top-quality grapes slowly and carefully fermented, results in wines that are deep, complex, and long-lived. They are clearly characteristic of their respective cru, exhibiting the steely bite so typical of Chablis, but with a purity, intensity of flavor, and structural soundness increasingly rare in the region’s wines.

Tasting Notes
Amongst the 1er crus at the Dauvissat domaine, the Vaillons is perhaps the most typical “Chablisien” with its clear reference to the Kimmeridgian subsoils ... an intensely mineral wine with a persistent core of tart fruit and citrus blossom.

All their wines are fermented in tanks and spend a year settling there before being carefully transferred to oak barrels, mostly neutral, for additional aging. This adds a richness, depth and complexity to the mineral, saline characters that their terroirs produce.

The 2022 Chablis Vaillons 1er Cru has a rather strict nose, backward with crushed stone and fleeting white flowers. The palate has a lovely rondeur on the entry with white peach and nectarine, those deep clayey soils giving depth and persistence to the finish. Quite powerful, but it will need time.

Bursting with notes of white flowers, orange zest, nutmeg and iodine, the 2022 Chablis 1er Cru Vaillons is medium to full-bodied, ample and fleshy, with bright acids and a long, expansive and perfumed finish. As ever, its expressive, charming style makes it something of the more-mineral Séchet's alter ego.

A mere 200 meters from the meager soils of Sechet, this is a site with more clay. A more voluminous expression, rounder and mouth-filling, with a note of phenolics as much as freshness. Tangerines with hints of stone fruit and nuts. An easy wine to love, without quite the pixelated freshness and exquisite detail of the Sechets.
