Overview of the Wine
OENO Π was founded by Paris Sigalas in the old wine cave of his family. It is located in front of the sea, in the area of the Kolumbo volcano, in Baxedes-Oia. What was once the traditional wine cellar (kanava) of Paris Sigalas' family, later housed the first steps of Domaine Sigalas winery, which was founded in 1991. Seven years later, a production unit for bottling and aging was built in the vineyard of Oia and the winery moved to this new privately owned space where it operates to this day. Today, in the very same expanded and modernized kanava, Paris Sigalas creates OENO Π with the aim of continuing his research and highlighting the great potential of this unique vineyard. OENO Π and Domaine Sigalas are now forming a strong synergy.

Winemaker's Tasting Notes

Aromas of ripe citrus fruits, distinctive minerality both in aroma and taste and a briny, sea salt-like character accompanied by vibrant acidity. Long and persistent finish characterized by a harmonious balance between the acidity, fruit, and mineral components.

Rich and full-bodied with good structure and long aftertaste. Minerality and saline
character with the distinct Santorini acidity, while the main characteristic is the elegance that distinguishes until the end.

Complex aromas of citrus fruits such as grapefruit, along with distinct mineral notes
reflecting the unique terroir of Santorini. The way in which the minerals evolve, while still remaining discernible, indicates its aging potential.

Serve with sea-food and fish, cheeses, white meat, at 10 - 12° C (50-54° F)

Still in amphorae when I tasted it, the OENO ? 2023 Santorini Tria Ampelia was scheduled to be bottled at the end of 2024. It should hit the market in March or April 2025. In a sense, this is an extension of what Paris Sigalas achieved back at Domaine Sigalas with his legendary blend of Assyrtiko from the seven villages. Only this wine is a blend of fruit from three villages (Fira, Megalochori and Akrotiri), each with fruit from Kouloura basket vines that are 60 years old or more. The wine ages in clay amphorae for 16 months. Tria Ampelia is textured and rich with ripe fruit aromas and a special oomph that comes with lemon meringue pie and creamy tangerine. You feel the softness of careful lees management and b'tonnage. No malolactic fermentation occurs on these whites.

Very bright and pure, with a nose humming of fresh lemon, pith and shortbread. On the palate there's a lovely generous, creamy roundness, counterbalanced with that tantalising flavour of sablé Breton, a chalky texture and fizzle of ozone on the finish. Compelling and complex but feels like it has an extra gear to it – one to watch as it develops.
