Overview of the Wine
We are in 1890, on Via Emilia, the most important commercial street in the country. Remigio Medici owns 3 successful taverns and decides to found a winery to enhance the family vineyards, located between Via Emilia and the first hills of the Enza valley. The son Ermete enlarges the company and consolidates its fame. The sons Valter and Giorgio, subsequently, begin to export, further spreading the brand. The long history of the Medici Ermete has officially begun...
Today the company owns about 80 hectares of plots (grown entirely organically), distributed among the areas with the highest winemaking vocation of the Emilia-Romagna region and exports to 70 countries around the world. At the fifth generation, represented by Alessandro, the Medici boast a solid experience in the vineyard and in the cellar.
They won their bet: the maximum enhancement of their wines. The winning idea was to create a close link between the territory and the wines produced, the strict selection of grapes, at the cost of a yield per hectare even lower than 30-40% compared to the specifications of the Doc, but with the guarantee of a quality never achieved before.
A wise winemaking, in completely renovated plants, and a viticulture respectful of nature and the environment, complete the production cycle. The market response was immediate and growing; the sector guides together with prestigious awards projected the products of Medici Ermete among the best Italian wines. For the first time in history the Lambrusco enters the temple of excellence.

Winemaker's Tasting Notes
Alessandro Medici takes fresh look at Lambrusco with his brainchild “Phermento,” a wine produced using exclusively Lambrusco di Sorbara grapes fermented using the Ancestral Method of sparkling wine production. Sorbara, which is one of the most delicate and lightly colored Lambrusco grapes, has a high level of acidity and low tannins that are well suited to the Ancestral method of production. The Sorbara vines are 35 years old, grown Cordone Speronato (cordon trained and spur pruned) in clay soil and with restricted yields. The wine ferments in bottle to brut nature (zero dosage), and is capped with a crown cap. The internal pressure is 2.5 bars, making this wine frizzante. The wine is best served at a temperature of 46 – 50 degrees Fahrenheit and should be consumed within two years of vintage.
Deep pink in color, the wine has a bouquet reminiscent of raspberry and red fruit. Dry, yet fruit-forward and vibrant. The bubbles are fine, rich and persistent on the finish.

This wild and funky wine is a joy. Aromas suggest watermelon juice, game and dried roses. The palate is similar to a sour beer but livelier, with tart wild berries and an earthy finish.
