Overview of the Wine
Salon honors the memory of its founder, a century on. In the 1910s, Eugène-Aimé Salon had a vision, a dream: to create a Champagne for all time, from a single grape variety, Chardonnay, laid bare in all its subtlety; from a single great terroir, Le Mesnil-sur-Oger; and from a single superlative year, the vintage.
A stand-alone defined by its singularity; subtle and complex, the world’s ultimate champagne. Champagne Salon is the absolute embodiment of this quest for perfection. It contains within it the poignant beauty of nature, reflecting its long, slow toil in the silence of the cellar. This is where that astonishing backdrop of savory minerals emerged, that sensation of chalk in the mouth: an immediate hit, building slowly, gradually, ultimately all-enveloping. It was here that this virile wine took form, exceeding all expectations; here that its beautiful minerality was forged, heralding a wine with limitless aging potential. In achieving perfect balance, nature’s work is complete.
The name Le Mesnil resonates in a special way with lovers of great wine. Nestled in the heart of the Côte des Blancs, 100% Chardonnay and 100% Grand Cru, this is the king of Champagne vineyards. It is here that the most profound expression of Chardonnay’s delicate freshness truly comes to the fore, where magnanimous nature offers a wine that is purity itself. This Champagne is produced from a 2.5-acre parcel owned by Salon (“Salon’s Garden”) and from 19 other smaller parcels in Mesnil-sur-Oger, chosen by Aimé Salon at the beginning of the 20th century.

Winemaker's Tasting Notes
The wine is pearlescent. A pale, lustrous gold with a fine, lively mousse.
The nose is complex yet ethereal. Wonderfully refined, it is intriguing and enticing. Its minerality complemented by hints of white flowers, acacia and hawthorn. A salty note enhances aromas of bread crust, brioche and the merest hint of green apple and hazelnut.
The palate is quintessentially pure, the very epitomy of balance and restraint. Exuberant on attack the mousse becomes more of a caress whilst bubbles dance playfully on the palate; its delicate allure emulating the sensuous grace of a silk veil at dawn.
Mastery character, elegance and bright vitality – Complex indeed.
Salon 1997: It is difficult to encapsulate where so many complementary and contradictory elements come together in such harmony. The finesse of silk, persistence, innate depth and power are allied to a lightness of touch. Serve slightly chilled between 13° and 15°C and its true subtlety will be revealed - feminine and seductive, voluptuousness without bounds.

The fabled Salon's latest release is much riper and softer than the great steely 1996 vintage. This suggests it is likely to be ready to drink soon. In the meantime, the acidity is supremely fresh, with grapefruit edges and green apple flavors. From a recently released bottle disgorged in 2018, the 1997 Blanc de Blancs Le Mesnil Brut is showing very well indeed, offering up aromas of citrus oil, crushed chalk, white flowers, warm bread and iodine that are appreciably more youthful than the more mature dried fruit tones that readers will find in bottles of the original disgorgement. On the palate, the wine is medium to full-bodied, tensile and incisive, with superb concentration, chalky structure and a long, searingly mineral finish.
