Overview of the Wine
The Domaine was started by Symphonien Chevillon in the late 19th century with a small plot (3/4 acres) which he farmed after finishing his daily work for other vignerons. Symphonien's son took over the Domaine upon his father's death and began to acquire small parcels of Nuits St. Georges premier cru. The Domaine is now 31 acres and is managed by Robert Chevillon, great great nephew of Symphonien.
Domaine Chevillon is often said to be the greatest Domaine in Nuits Saint Georges. With a focused core of Pinot fruit, the wines are always balanced, never over-oaked or over-chapitalized. Chevillon's Burgundies cellar well, but in their youth they show elegant berry and earth perfume, and are best paired with game dishes, roasted birds such as quail and duck, and strong aromatic cheeses.

Tasting Notes
The brother’s classic methods, learned from their father, express these great terroirs with startling clarity. The old vines naturally produce low yields of concentrated grapes, and Denis and Bertrand handle it simply: the fruit is destemmed, given a long, cool fermentation and maceration in stainless steel, and then racked, with the press wine, into barrel for aging, 20% new for the villages wines and 30% for the premier crus.
Nuits 1er Les St.Georges shows darker fruit. Deep, dense and faintly musky

The 2012 Chevillon Vaucrains is again a brilliant wine in the making. The stunningly pure and deep bouquet offers up scents of red and black cherries, red plums, cocoa, venison, a very, very pure base of complex soil tones, woodsmoke and vanillin oak. On the palate the wine is pure, full-bodied and absolutely rock solid at the core, with plenty of firm, well-integrated tannins, and stunning focus and grip on the very, very long, utterly soil-driven finish. I love the blend of sappy fruit elements defining the nose and the very classically structured, pure and seamless palate impression- it is a very promising combination that will deliver a totally stunning wine with sufficient bottle age. Great juice.

Red-ruby. Superripe, liqueur-like aromas of dark cherry, menthol, mocha, chocolate and earth; today the fruit is in the background. A major mouthful of very rich dark berry and spice flavors but this huge, deep, very ripe wine is totally unevolved today. The tannins are substantial but even and the slowly mounting finish saturates the palate. But I can see this big boy needing a long time to lose some of its baby fat and come into focus.

Medium ruby colour, the nose is very Chevillon with an easy-going elegance. Good depth to this, some crunchy red fruit in the background, medium plus length. Very pleasing and accessible now.
