Overview of the Wine
Our journey began in 2017 with the belief that the Walla Walla Valley was poised to rise on the world wine stage. We were particularly intrigued by a small wine-growing appellation called The Rocks District of Milton-Freewater, where a unique 3,600-acre area possessed one essential quality for global significance: terroir. Terroir refers to the natural environment where a specific wine is produced, including soil, topography, and climate. This distinctiveness of place is rare in the wine world and allows both connoisseurs and novices to be instantly transported to that location when they smell or taste wines from these regions. This characteristic is what makes Burgundy, Barolo, Bordeaux, and Napa Valley stand out in an increasingly crowded market of wine choices.

Winemaker's Tasting Notes
The 2021 Cabernet Sauvignon comes from our estate San Tommaso Vineyard, named for Tom Waliser, who planted the vineyard in 1998. With nearly 30 years of age on these vines, they are producing wines of beautiful balance and age-worthy structure. This Cabernet was aged for 22 months in 70% new French oak and shows notes of gamey meats, cassis, black currant, baking spice, fresh herbs, tobacco leaf, and dried flowers.

Coming from a single vineyard in the Rocks region of the Walla Walla Valley and vines planted in 1998, the 2021 Cabernet Sauvignon Stone Valley has a classic Rocks style in its gamey cassis and darker currant fruit as well as notes of graphite, spicy oak, and sappy herbs, with some background meaty and iron-like nuances. On the palate, it's medium to full-bodied, has a pure, elegant mouthfeel, ripe tannins, and beautiful balance. This spicy, complex, layered, and just incredibly satisfying effort will continue to drink nicely for 15-20 years.
