Cami dels Xopsis a blend of Macabeu and Xarel-lo from two adjoining parcels. The grapes are wild yeast fermented in stainless steel tanks and old 225L French oak barrels, and bottled before primary fermentation has completely finished (with about 20g/L sugar) in the métode ancestral style... so don't call it a cava :)

Why I liked it: I love the freshness, the persistence, the flavors, and the fruit. The earth and stone emerge instead of distinctly earth first, which most Cava wines display… The fresh factor works here and the elevated quality of the produce shines here. PET-NATS can be on unrefined, off putting and this one really rises up and separates from the rest. This is a winner!
