Join Ian Blackburn on Zoom Into Wine and The Ojai Vineyard!
We will be discussing three different wines that we have stock in with Adam Tolmach, Ojai winemaker.
The Ojai Vineyard began in 1983 with the dream of producing distinctive California wines using traditional wine making practices learned in Burgundy and the Rhone valley. Few decades later Adam Tolmach continues to pursue the craft at his artisanal winery in Ojai, California, purchasing grapes from the finest terroirs in the coolest districts of northern Santa Barbara County. His quest to bring together European sensibilities of balance and finesse with the exuberant fruit from coastal California vineyards is expressed in the wines he makes today.
While it is true that all the important elements of a wine are created in the vineyard, what goes on in the cellar profoundly influences wine. To capture the essence of a vineyard site it is better to have a light touch in the winery and subject the wine to the least amount of moving, pumping, fining and filtering. Winemaking is the ability to express the features of a site, varietal, climate and vintage. There are many details to achieve those goals but most important is temperature control. It starts during fermentation and continues throughout the elevage of the wine, allowing us to preserve fragrances and textures of the fruit by slowing down their maturation. Protecting the wine from oxidation, moving the wine only when necessary and carefully considering the logistics all the way into the bottle is key to capturing the essence and vibrancy of a wines.

Changes to the wines may occur at any time, wines do run out, vintages can go extinct, and we react by making the needed changes as events occur.
