At 15,  Emé began an apprenticeship at the Hôtel de France in Contres, embarking on a journey that would take him into the world’s most rarefied kitchens. During his career, he honed his skills at the Michelin two-starred Auberge des Templiers in the Loire Valley and cooked alongside such luminaries as Gérard Rabaey in Switzerland and maverick chef Marc Veyrat at his three-star Auberge de l’Eridan, in the French Alps. In Paris, Émé worked with chef Michel Rostang at his eponymous restaurant in the 17th Arrondissement, and with Philippe Legendre at Paris’ opulent three-star Taillevent and later assisted Taillevent owner Jean-Claude Vrinat in opening the exclusive Normandie Grill at the Hotel Oriental in Bangkok.
Emé arrived in the United States in 2001, briefly working in New York, before moving on to Los Angeles to cook at the venerable L’Orangerie. There he introduced his signature brand of modern French cuisine, which eschews heavy, cream-based sauces in favor of intensely flavored emulsions and natural jus. After the traditional formality of L’Orangerie, Emé opened the legendary Michelin starred Ortolan.

ABOUT Frédéric Barnier - Louis Jadot Technical Director

Frédéric Barnier graduated with a degree in Engineering at the Agronomic School of Montpellier and completed his education in 1999 with an Oenologist’s National Diploma.

Following his graduation, he joined “Château de Chassagne-Montrachet” where he undertook various duties that included vineyard management and vinification. In 2004, he took charge of the entire estate and its wine production. Frédéric joined Maison Louis Jadot in March 2010, as Technical Director, under the advisement of Jacques Lardière. Frédéric and Jacques have had the perfect working relationship with a shared vision of winemaking. They have work closely with the joint belief of the Maison Louis Jadot philosophy: no compromise on quality and ever greater control over raw materials.

Currently, Frédéric manages the winemaking team at the facilities in Givry and “La Sablière” in Beaune.

Frédéric Barnier, a native Breton, is 39 years old, married and the father of four children. He enjoys spending time with his family and cooking. In addition to wine, Frédéric has a passion for diving – he is a certified diving instructor.

    ABOUT Cyril Chirouze - Winemaker

Born in Lorraine in 1983, Cyril was enthralled by wine at a very young age, and directed his studies towards a career in the field. He graduated from the Ecole Nationale Supérieure Agronomique in Montpellier with a degree in agricultural engineering, having specialized in viticulture and winemaking.

He began his working life in the vineyards of Domaine Piron in Beaujolais in 2006, then made wine at the Château des Jacques between 2007 and 2013.

After having concentrated on Gamay for a number of years, Cyril wanted to manage a Pinot Noir vineyard in the Côte de Nuits, and spent two years at the Château de Marsannay. Nevertheless, the siren song of the Gamay grape lured him back to Beaujolais!

Cyril has two children, Anna and Constant. He loves sports, particularly badminton and running. He runs one marathon each year, but hates speaking about the times he achieves. He's also a good cook, and enjoys eating the results with friends.  Cyril is particularly inspired by chefs Michel Bras and Anne-Sophie Pic.
