Overview of the Wine
At their entry at the winery, the grapes are 100% destemmed. These fruits are then put in tank without any crushing, to keep an intact berry. A cold soak follows, it goes from 3 days to a week, depending on the appellations and the vintage. Then the alcoholic fermentation takes place with a classic scheme of vinification, not very interventionist, the pump overs and punch downs are done case per case in function of the densities and the taste of every wine. The wines are then barrel down by gravity in French oak barrels in order to mature and do their malo-lactic fermentation. 60% one year old barrel - 40% new oak.

This vineyard is crossing the appellation from the top to the bottom, which allows to draw a maximum of elements for a bigger complexity of the wineand a better homogeneity of the appellation.The soils are made of limestone and of claymarls.The average age of the vines on the vineyard is about 35-40 years old.

Les Chaumes is a large Premier Cru climat located at the southern end of the Vosne-Romanee. Les Chaumes Premier Cru wines are full bodied and supple. Les Chaumes' terroir is greatly influenced by its position on the slope, in terms of both soil and the mesoclimate felt in the vineyard. The limestone-based marl that covers the vineyard is deeper and richer than in the climats further up the Cote d'Or. The Pinot Noir vines here tend to be slightly more vigorous than in Aux Malconsorts, and growers must prune carefully to ensure berry quality is not compromised. Les Charmes is one of the warmer climats in the area, and thus among the first to be harvested.

Winemaker Notes
There are a total of 12 hectares of vines, mostly in Vosne-Romanée and Nuits-Saint-Georges. Old vines are found throughout all of the sites and the oldest of the vines go back to 1921 for the Nuits-Saint-Georges 1er Cru Clos des Corvée Pagets. Millerandage (the underdevelopment of the bunches during flowering, causing smaller berries) is positive in this case as it contributes to the concentration for which the Arnoux-Lachaux wines are famous. Bursting with cherry, raspberry and floral flavors, this is supple and intense. The firm, vibrant structure creates harmony, while the fruit and mineral notes finish long and satisfying.
