About the Producer
Located in the tucked away Commune of Saint Foy in Bordeaux, this family farm has operated for generations. It has seen the coming and goings of wars, destructive weather, and an inundated region growing fast around them. In the 1920s, the grandparents of Corinne Comme left Italy for this quiet 9.8h commune, to live in harmony with the vines and the soil. They have believed since that Nature dictates what to do and where to be in the vineyards. “She rains and turns muddy the corners of the vineyards she wants left alone and turns hard-packed the ground she wants untilled”. To say each meter of ground to them is different and important is an understatement. The soils are clay with large chalk scraps but to them, it is an ever-evolving mixture as they walk and turn the earth. The rows are allowed a rotation of grasses that are tilled under gently by mechanical plowing. All else is left to nature and the biodynamic calendar. Jean-Michel Comme, Corinne’s husband and estate manager from Chat. Pontet-Canet in Pauillac has overseen the winemaking for the past 17yrs. The petit red is all about freshness (no oak used) while the Grand Vin of the estate is wood-aged and built to do more so.

Overview of the Wine
Grapes are handpicked from vines of Merlot, Cabernet Franc, Cabernet Sauvignon, and Petit Verdot. They are de-stemmed and pressed into a steel tank without a soak. Fermentation begins with natural yeasts and lasts about one month after which the wine is aged in a steel tank for eighteen months. Finally, the wine is lightly filtered and then bottled. A small addition of SO2 is made before bottling.

"The wine offers a bouquet of dark berries and plums with a touch of menthol, iron and spices notes. With good acidity and soft tannins, this Bordeaux wine has a delicious easiness to it. Pair it with a classic "steak and frites" and you will be transported back to a French bistro experience. "
