Overview of the Wine
Since 1561, viticulture has been practiced with the highest quality standards at Friedrich-Wilhelm-Gymnasium in Trier.
The cellar of the Friedrich-Wilhelm-Gymnasium is located directly under the center of Trier’s old town. A Jesuits’ foundation stone from 1593 testifies to the centuries-old history of the cellar. Back then, the original cellar was accessible from today’s Restaurant Cumvino, which was once the press house. Along 25 hectares of impressive steep slope sites in the Mosel and Saar valleys, Riesling grapes ripen to internationally recognized top quality. In essence, the cellar master’s work is mostly focused on this traditional vinification of the wines, including tasting and knowing when to find the right moment to bottle the wines. Rieslings fermented in Fuder have very good structure. The wines aged in large casks have a gentle aeration on the lees, which, along with the ambient yeast ferments, gives them durability.
Over many decades, the Fuder are filled anew with fresh grape musts each autumn, but not to impart wood aromas, as is widely used with toasted new oak barrique barrels, which have about 225 liters’ capacity. On the contrary, the typical and – depending on the site and vintage – pronounced fruity-aromatic components of the Riesling grape remain until bottling and for many years to come by vinifying a wine in Fuder.
The remaining grapes are just as expertly vinified in stainless-steel tanks. The quality of the wines in stainless steel is the same as in Fuder. Only the type of wine is different.

This Riesling has a classic Mosel liveliness, with juicy fruit and a dry mineral finish. It’s both a party wine and versatile with a variety of dishes and, thanks to its authenticity, it meets the everyday demands of Riesling connoisseurs.

The 2016 Graacher Himmelreich Riesling Kabinett is a fabulous showing from Willi Schaefer. Bright and vibrant with beautifully clarity, this opens to aromatics of white peach, lime, green tea and wet stones all coming together. On this palate this is precise and beautifully balanced with a gorgeous combination of ripe fruit and lovely acidity making for a mouth watering finish. While this is simply delightful and just about impossible to resist now, expect this to continue to drink beautifully with some bottle age

Juicy, sun-kissed grapefruits and apple blossoms explode from this buoyantly fresh, off-dry Kabinett. Invigorating acidity lends backbone and a steely focus that resonates long on the finish. It's beautiful now, but should hold nicely, and perhaps improve, through 2020.
