Established in the 1970s by Robert Dauvissat, the Domaine has passed down from father to son for three generations. Robert’s son René is to thank for establishing the reputation of the Domaine. Vincent began working with his father, René, in the 1970s and today runs the Domaine. A loyal following among France’s most esteemed restaurateurs sharply limits the availability of Dauvissat wines for export. Despite limited quantities, the wines have attracted the praise and attention of critics worldwide.

Vinification at the domaine is painstaking and traditional at a time when many growers in Chablis have adopted methods permitting increased yields producing simple wines that reach maturity quickly. Vincent Dauvissat, on the other hand, gives all his wines at least a year in Nevers oak, a portion of which is new each vintage. This practice, imposed on top-quality grapes slowly and carefully fermented, results in wines that are deep, complex, and long-lived. They are clearly characteristic of their respective cru, exhibiting the steely bite so typical of Chablis, but with a purity, intensity of flavor, and structural soundness increasingly rare in the region’s wines.

Winemaker
Vincent Dauvissat

Grape / Blend
Chablis

Origin
Burgundy, France

Winemaker's Tasting Notes

Vincent Dauvissat's Vaillons Premier Cru is renowned for its vibrant freshness and harmonious balance. In its youth, the wine presents aromas of green apple, white peach, lemon zest, and subtle floral notes, underpinned by classic wet stone minerality. With bottle age, more complex aromas emerge, including honey, dried fruit, and distinctive savory notes that many consider hallmarks of this vineyard.

On the palate, Vaillons displays ample, fresh white fruit flavors balanced by vibrant acidity and a clear mineral structure. The wine combines accessibility with sophistication—offering immediate pleasure while maintaining the precision and complexity that are hallmarks of great Chablis. The finish is typically long and satisfying, with persistent mineral notes that invite another sip.

While approachable after 2-4 years in bottle, a well-cellared Vincent Dauvissat Vaillons will continue to evolve beautifully for 8-12+ years in favorable vintages. At maturity, it develops remarkable complexity while maintaining its essential freshness and vibrant fruit character, offering an excellent balance between immediate enjoyment and aging potential.

95 Points - Robert Parker's Wine Advocate
Informed by deeper soil than Séchet, the 2023 Chablis 1er Cru Vaillons opens from the glass with aromas of honeysuckle, white peach, tangerine and smoke. Extroverted, full-bodied and textural, with a chalky grip and saline finish, Vaillons is more open-knit than its neighbor Séchet. However, this youthful charm can be deceitful, as, based on my experience enjoying this cuvée 10 or even 15 years after harvest, it always richly rewards patience.
