Domaine Servin Les Pargues. Chablis, Burgundy, France, 2018
Overview of the WineFrançois Servin, along with his Australian associate Mark Cameron, direct the operations of this 30 Ha domaine. Tradition is important to the Servin family, which because of its long history in Chablis, owns some great parcels; four Grand Crus - Blanchots, Bougros, Les Clos and Preuses; six Premier Crus - Butteaux, Les Forets, Montee de Tonnerre, Monts de Milieu, Vaucoupin and Vaillons. Even the parcels of village are very well situated, with their largest, les Pargues, formerly being a Premier Cru. François, however, while appreciating the great tradition, has taken great steps to bring this domaine (with the spectacular potential sites) into the forefront of Chablis. He is resuming the practices of hand harvesting (all the Grand Cru are now hand harvested; a large portion of the Premier Cru, too). For new planting, he is using uncloned Chardonnay and planting it at greater density. Some cuvées are being bottled for us with no filtration, and we work closely together sharing ideas.

This vineyard benefits from the same quality exposition and soil as its prestigious neighbors. A fresh, vivacious style with intense floral aromas. Our Chablis has the perfect balance, combining full, generous fruit flavours with finesse and elegance. Lime-clay soils with Kimmeridgian fossils. Fermentation and maturing in stainless steel.

Tasting NotesA more elegant and more complex nose is comprised by notes of mineral reduction, sea breeze white peach and a whisper of acacia. The delicious, plush and solidly dense medium weight flavors exude a subtle minerality on the clean and dry finish that exhibits very fine length.

The 2018 Chablis Les Pargues is a very pretty, exotic wine. Sweet floral notes, passion fruit, mint and lemon confit give the 2018 a decidedly exotic flair to play off its airy, lifted personality. Apricot, mint and light tropical notes add character to this very pretty, expressive Chablis that is a bit tight on the finish but will open up nicely with time.
