Overview of the Wine
Chablis, this name is known all over the world. This réputation is due to the prestigious wines that are produced in this village of 2500 people based in Burgundy.
The Domaine Raoul Gautherin et fils is a family estate transmitted from father to son for many generations. We benefit an ancestral knowledge and a top-of the-range vineyard exposed on the best hillsides.
Our wines are elaborated in a traditional way, to let express our inimitable clay-limestone soil. Our vineyards are cultivated with rigor and passion in a reasoned and sustainable way.  No French wine-growing area has pinned its faith more firmly on the facts of geology. The main substrate is Jurassic limestone (specifically, Kimmeridgian limestone) laid down some 150 million years ago. The rock contains deposits of tiny fossilised oyster shells which remind us that Bourgogne once lay beneath a warm ocean. Some particularly valuable Climats produce the Premier Cru.
Chablis: it can be enjoyed young (2-3 years old) with fish or poultry terrines, or with grilled or poached fish. It also goes well with asparagus, which is normally difficult to match, as well as exotic cuisine: it can handle curries or tandoori dishes and it also balances out the mellow and subtle texture of sushi. Or you could simply drink it as a splendid pre-dinner drink.
It harmonizes well with goat cheeses, as well as Beaufort, Comté, or Emmental.

Tasting Notes
Bright pale gold in the glass, with a hint of platinum. Welcoming aromas of citrus blossom, nectarine, and lemon preserve. The palate offers an expressive and vibrant mineral throughline, driven by crushed limestone and dressed with lemon rind and honeysuckle. The wine resolves in cleansing acidity and a long finish.

The nose is aromatic and offers a small intensity, a fine power, freshness and deepness. It reveals notes of pulpy/fresh quince, yellow apple, small notes of William pear associated with small touches of dry almond, toasted, pear flowers and a very discreet hint of spices. The palate is fruity, well-balanced, racy, fresh and offers a beautiful finesse of the grain, a good definition as well as a beautiful guideline. On the palate this wine expresses notes of juicy / pulpy lemon, quince and small notes of mirabelle plum associated with small touches of racy minerality, a subtle hint of fresh / juicy orange, Williams pear as well as slight hints of pear blossoms and toasted oak.
