With a small team, they cultivate the land year-round to take the greatest possible care; Poussard pruning, organic fertilizers, careful trellising, leaf removal, and hand harvesting on all their vintages. The Bouchard’s attach great importance to the life of their soils and vines, with the average vine age being 30 years, and the oldest over 50 years old.\u003c\/p\u003e\n\u003cp\u003eThe first vintage vinified at the Domaine was in 2016, in their brand-new, energy conservative, gravity-fed cellar. Vinification is done with ambient yeasts and bacteria and is finished in both stainless-steel and French oak barrels, with up to 18 months on lees.
