Crafted by Russell Bevan, one of the most sought-after winemakers in California today, Addax is an artisan winery founded by Brian Kearney and Josh Peeples. What began with a few friends and a few barrels of Cabernet in 2009 has evolved into a phenomenal portfolio of wines, including Oakville Cabernet Sauvignon, Petaluma Gap and Sta. Rita Pinot Noir, and a selection of Sonoma Chardonnays.
After more than a decade, we continue our quest to work with exceptional vineyard sites to produce wines with brazen personality. As a part of The Institution family of wines, made at 2100 Hoffmane Lane, we utilize our winery in Yountville to highlight some of California’s most sought-after vineyards. Our dedicate cellar team is passionate about producing wines that stand shoulder to shoulder with the most sought after wines in the world.

Overview of the Wine
Adversity Cellars is a project from Russell and Heidi Bevan that is designed to showcase sites that have unique flavor and textural profiles from vineyards whose location forces the vines to struggle for their existence; forcing them to deal with great Adversity.
Our Sage Ridge Cabernet Sauvignon is a pure mountain wine. It has a raw, primal quality that is absolutely intoxicating. As you would expect from a Mountain Vineyard it has a fabulous tannin profile, but the wines acidity gives it amazing drive and focus. The fruit flavors here are a darker fruit profile than on the Erba Cabernet Sauvignon. Here we get cassis and blackberry that wash away any tannin build up giving the wine a crazy long finish. As she opens up, the mid palate becomes very plush and the aromatics begin to show hints of tobacco and cedar. This is a wine that won’t let go easily. 256 cases produced.

Winemaker's Tasting Notes
Magestic, primary and almost savage, Sage Ridge never holds anything back. Powerful fruit flavors pulse from the wines that come this vineyard. As the mountain top has been battered by rain and weather for centuries, the vines here struggle as the vineyard has no real nutritional value. The vines are forced to seek out an existence and as nature always finds a way to survive, the vines put virtually all of their energy and power into creating flavorful grapes that will attract animals to ensure that the vine can produce offspring and survive. This site magnifies nature’s majesty in that struggle and it reveals itself perfectly in the glass.

The 2019 Cabernet Sauvignon Sage Ridge is another inky hued wine from Bevan and offers lots of ultra-ripe black cherries, blackberries, wildflowers, chocolate, and a kiss of iron. With full-bodied richness, a dense, layered mid-palate, and lots of tannins, it nevertheless has beautiful purity and a seamless texture. Made from 100% Cabernet Sauvignon, from a steep, terraced vineyard (Kuleto), it's another terrific wine in the lineup.
