The vineyards are planted with 40% Chardonnay, 30% Pinot Noir, and 30% Gamay vines. The Bernard Moreau Bourgognes transcend their origins and are among the finest estate-bottled Burgundy values available. Moreau adheres to the principle of sustainable agriculture. He takes great care to ensure that his vines are in excellent health by constantly observing the vegetative cycle and the natural environment. His observations allow Moreau to take the minimal necessary measures and avoid synthetic chemical treatments. Moreau plants grass between rows and leaves vine cuttings on the soil as mulch in order to control erosion and enrich the microbiological vitality of the soil. François and Isabelle Lumpp founded the domaine in 1991, with no inherited vines, and have now been joined by their children, Pierre and Anne-Cécile. The vineyards are planted with the finest materials and very close spacing. Viticulture is fanatical and yields are kept very low. They work as organically as possible during the early part of the growing season and employ limited doses of conventional treatments later on, to avoid tractor usage and compaction of their soils. All the grapes are handpicked and there is a further, severe selection prior to vinification. The reds are 100% destemmed and vinified in open-top, stainless steel fermenters. The whites are all vinified throughout in barrel. The whites see 30% new oak and the reds up to 70%. Much like its neighbor Chassagne-Montrachet to the south, Saint-Aubin was historically known for red wine, though the Larues have specialized in the great white crus of Saint-Aubin. In 1976, Guy’s son Denis assumed the reins of Domaine Larue and was joined by his brother, Didier, in 1982. In 2006, Denis’s son Bruno joined the Domaine, thus continuing the family’s winemaking lineage.

The Larue holdings are spread between the two villages of Saint-Aubin and Puligny-Montrachet, with a large concentration at the southern portion of the Saint-Aubin appellation. Combined with the varying grades of slope and elevations ranging from 800 to 1200 feet, the Larues have a truly magical diversity within Saint-Aubin, one of the under-rated gems of Burgundy. The domaine's premier cru vineyard in Puligny-Montrachet, La Garenne, sits at a high altitude in the Hameau de Blagny, bordering Meursault. Their largest parcel, Saint-Aubin premier cru “Murgers des Dents de Chien,” shares its name with the Dents de Chien lieu-dit of Le Montrachet that is right around the corner and is the domaine's prized vineyard, capable of producing wine that can age and improve in the bottle for decades.

Wines from Larue possess purity, energy, and an invariable minerality derived from the predominant limestone soils of Saint-Aubin.
