Pierre Vessigaud, the 5th generation to manage the estate, took over in 1988 and has been working organically in the vineyards ever since. He submitted for recognition by Ecocert (AB) in 2010. The estate consists of around 8 hectares in total: 3 hectares in Mâcon and 5 ha in Pouilly-Fuissé. All the vines are manually plowed. The vines average 35 years and the vineyards have a south\/south-east exposure and soil consisting of chalk, clay and morainic shells and stones. The vineyards are between 200-250 meters high with a high plantation density of 8,500 plants\/ha. Pierre uses only copper sulphate in order to protect the vines. The grapes are harvested manually in small boxes and are pressed without destemming. All fermentations are spontaneous, using only wild yeasts. Malolactic fermentation takes place in barrels aging from one to ten years old. Pierre’s goal is to produce precise wines with freshness, crispness and minerality. He wants them to be rich yet drinkable with a recognizable balance. Jean-Marc has instituted several changes at the estate, the most prominent of which is the construction of a new cave. Of equal importance, Jean-Marc expanded the amount of vineyards under cultivation and has made subtle modifications in vinification and elevage to place his own “mark” on this estate which now covers approximately fifteen hectares with an annual production of, more or less, 60,000 bottles. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe domaine is dominated by its production of white wines but there are important cuvées of red wine produced here as well. Vineyard holdings are spread throughout the village of Chassagne with subsidiary parcels in Puligny, Santenay, Meursault and Remigny (to the south). This breadth of real estate enables the Pillot family to produce a stunning range of wines that put on brilliant display the intricacies of terroir in this southern tier of the Cote de Beaune. The estate's jewels are its premier crus blancs (Baudines, Chenevottes, Macherelles, Vergers, Morgeot, Caillerets, La Maltroie and Champs Gain) and premier cru rouges (Macherelles, Morgeot, Clos St.Jean), all within the boundaries of Chassagne Montrachet. However, one should not overlook several gems that come from less exalted appellations, such as the Bourgogne Blanc \"Grands Champs\", the Bourgogne Rouge \"Grandes Terres\", and the expressive Santenay Rouge \"Champs Claude\"; and, of course, there are the fine village wines in both white and red from Chassagne. Around that same time, Antoine Jobard took over from his father (in 2007) and gradually pushed the level of perfectionism even higher. Following his father's methods of longer elevage, in-barrel fermentations and long lees contact, Antoine's next step as to elevate the farming; biodynamic methods were instituted, and the noticeable changes are in the wines approachability in their youth, but also the exuberance and charm of the fruit in genral.
