Long considered the heir to his father in law, the legendary Giuseppe Quintarelli, Celestino Gaspari rather decided to go his own way, and is now one of the major players in Valpolicella. Not a surprise with wines like Zyme, a red full of fruit and freshness that seduces at first sip.

-De-stemming, pressing, cryo-maceration, controlled-temperature fermentation with cultured yeasts and simultaneous malolactic.
-Aged In steel about 6 months

Tasting Notes
Nose: sweet notes of cherry, wild cherry and morello, slightly spicy.
Mouth: crisp, spicy, fruity, medium-bodied, with strawberry, cherry and raspberry. Quite long.

This is one of the most exciting wines in modern day Valpolicella zone - I was eager to try these much discussed productions. There is an artisan edge to these wines that large producers can not achieve. The wines come with a small price premium, and i would encourage you to try this entree level offering... it is special, enlightened and really good.
