The marriage of Franz’s daughter, Ilse, to Dr. Toni Bodenstein in the 1990s was the catalyst for a sweeping renaissance at the winery. Bodenstein, a biologist, geologist, and historian, spent years studying the geology of the region and focused much of his attention on preserving genetic diversity. His “Arche Noah” project, a planting of old Grüner Veltliner and Riesling clones, resulted from his research. Bodenstein’s scholarly approach, passion for biodiversity, and brilliant winemaking has elevated Prager to the highest echelon of Austrian wine producers. The Prager estate is made up of 17.5 hectares planted to 60% Riesling and 40% to Grüner Veltliner. Located on steep terraces, the vineyards are partly in Weißenkirchen (Hinter der Burg, Hinter Seiber, Steinriegl, Zwerithaler, Klaus, and Achleiten), partly in Dürnstein (Kaiserberg, Hollerin, and Liebenberg), and are planted at extremely high densities of up to 15,000 plants per hectare. Bodenstein makes four different wines from the famed Achleiten vineyard including Wachstum Bodenstein Grüner Veltliner (from 110 clones), and Stockkultur Grüner Veltliner produced from a patch of very old post-trained vines at the top of Achleiten. Wachstum Bodenstein Riesling (from 25 clones) comes from the upper terraces of Hinter Seiber. Prager belongs to the prestigious Vinea Wachau and vinifies under the strict parameters of their codex. Harvest is typically from October to November. Grapes are hand-harvested, sorted to eliminate botrytis, and sent directly to press where they’re fermented by what Bodenstein describes as “controlled spontaneous fermentation.” Toni Bodenstein prevents malolactic fermentation from occurring. Since 1996, Prager wines have been vinified entirely in stainless-steel tanks. All 75 acres of vineyards held by Weingut Stadt Krems are within the city limits. The Krems Valley is only a small winegrowing area, defined by two different soil profiles. The rolling highlands and the eastward falling slopes of the \"Bohemian Massif\" are some of the oldest formations in the world. In the Krems area, it is made up of various types of gneiss, whose weather-beaten forms make up the original Urgestein (primary rock) of the terraced vineyards to the west of the city. This is excellent soil for growing Riesling. But the loess soil is of particular importance for viticulture in Krems. The loess was formed in the most recent Ice Age some 300,000 years ago. It is mainly found on the southern and southeastern slopes of the Krems vineyards. It provides optimal conditions for growing the famed Grüner Veltliner of Krems with a lot of spice and fine structure. Fritz Miesbauer and his colleagues aim to produce wines with a clean fresh profile that are enjoyable to drink, and are typical of the region. They start with great vineyard sites, planted with the correct varieties for their soil profiles. The grapes are selected without influence of botrytis, fully ripe but clean. Respekt has branched out from Austria and now covers “German speaking areas” including Germany and Northern Italy. Respekt is an independent organization and takes a holistic view to biodynamics; the charter that members sign onto is a set of criteria which is certified twice per year by Lacon – it is not a “certification by way of an honor system” as some naysayers have suggested.\u003c\/p\u003e\n\u003cp\u003eIn the vineyard Hirsch uses biodynamic preparations and follows the lunar cycle for vineyard work. 85% of his holdings are in the slopes in the villages of Zöbing and Kammern, home to the Heiligenstein and Gaisberg Riesling vineyards as well as Lamm, Grub, Renner and Kammerner Gaisberg for Grüner Veltliner, though he is quick to note that “the grape variety is just a way to transport terroir. One hundred years ago, you might just find the village name on the label or the vineyard and no mention of the variety; it was not so important.”  A full two thirds of his holdings are in classified, Erste Lagen vineyards.\u003c\/p\u003e\n\u003cp\u003eIn addition to biodynamic practices, Hirsch utilizes soft pruning, a method he learned in Alto Adige to minimize the amount of cuts and thus lessening the amount of tissue exposed to disease and old wood near the pruned area. The winery is located in Kammern, a short distance from the vineyards, so the fruit is pressed a very short time after it’s picked. Yields here are very low, especially for the single vineyard wines, which are between 35 and 40 hectoliters per hectare. Grapes are always whole cluster pressed without crushing. ‘Hannes favors a long pressing rather than a short one, echoing fellow respect member Bernhard Ott’s feeling that the stems are “part of the wine too”.\u003c\/p\u003e\n\u003cp\u003eThe basic wines and and village wines are normally fermented and matured in stainless steel while the Erste Lage wines are done in a mixture of steel and oak, depending on the vintage.
