Salon honors the memory of its founder, a century on. In the 1910s, Eugène-Aimé Salon had a vision, a dream: to create a Champagne for all time, from a single grape variety, Chardonnay, laid bare in all its subtlety; from a single great terroir, Le Mesnil-sur-Oger; and from a single superlative year, the vintage.
A stand-alone defined by its singularity; subtle and complex, the world’s ultimate champagne. Champagne Salon is the absolute embodiment of this quest for perfection. It contains within it the poignant beauty of nature, reflecting its long, slow toil in the silence of the cellar. This is where that astonishing backdrop of savory minerals emerged, that sensation of chalk in the mouth: an immediate hit, building slowly, gradually, ultimately all-enveloping. It was here that this virile wine took form, exceeding all expectations; here that its beautiful minerality was forged, heralding a wine with limitless aging potential. In achieving perfect balance, nature’s work is complete.
The name Le Mesnil resonates in a special way with lovers of great wine. Nestled in the heart of the Côte des Blancs, 100% Chardonnay and 100% Grand Cru, this is the king of Champagne vineyards. It is here that the most profound expression of Chardonnay’s delicate freshness truly comes to the fore, where magnanimous nature offers a wine that is purity itself. This Champagne is produced from a 2.5-acre parcel owned by Salon (“Salon’s Garden”) and from 19 other smaller parcels in Mesnil-sur-Oger, chosen by Aimé Salon at the beginning of the 20th century.

Winemaker's Tasting Notes
Salon 2007 is immediately appealing with its pale shades -- cool blonde tones glistening with lemon and green. The bubbles are fine, the very essence of Salon 2007 in all its dynamic luminous energy. In the glass, aromas form a moving backdrop, fresh and bright as sunrise, with notes of lemon, lime, yuzu, then green apple, a hint of smoked tea and fresh herbs on wet stone. The palate is focused on backbone and purity; this is the terroir of Le Mesnil taking center stage, displaying its unique rigor and stony imprint. An electric sensation, sending shiver upon shiver down the spine. Salon 2007 will shine on, preserved in the darkness of its cellars, asking only to be brought into the light, a shimmering aurora borealis. The seas and deep oceans are a veritable treasure trove of delights to match with radiant Salon 2007. The oyster, in all its forms – fresh, in a gratin, as a foam….Langoustines in tempura, a seabass tartare, ceviche, scallops. On the richer side, a 24-month aged Comte or a truffled brie would make a colorful grand finale to any fireworks featuring Salon 2007.

This legendary Champagne, only produced in exceptional years, comes from the village of Le Mesnil in the Côte des Blancs. It is made from 100% Chardonnay and aged for many years before release. Its minerality, concentration and beautiful fruit are still astonishingly young and deserve further aging.

A year marked by frequent changes in weather, ranging from sunny conditions in June and July, a cool August and then a return to sunny weather in September. The vintage benefited from the slow-ripening conditions afforded by the late season. The supremely elegant nose has a dazzling array of scents ranging from herbs, spices, and flowers to pineapple and pear. The attack is power-driven, but a backbone of racy acidity brings vivacity and propels the wine to a weightless, airy finish. Not as dense as many Salon Champagnes, but this remains a singular and impeccably elegant vintage. Best to be patient for another 15 years

Such an impressive wine for the detail in every respect. The nose delivers fresh lemon and grapefruit peel, together with white, stony minerals and very, very fresh and light pastry notes. Some grilled hazelnuts, too. The palate is super fine, supple and crisp with attractive, dry, salty minerals on the finish that holds super long, fine and focused. Elegant citrus and light brioche to close. Drink or hold.
